Cover the work and cook for 5 more minutes over medium heat. Add the rice flour mixture, and stir for 5 minutes until mixture becomes a starchy fudge. Oil a large 12″ steam tray. Mix the rice flour with water and salt to make a batter. Heat 4-6 tablespoons of cooking oil in a pan, then sauté the spice paste until fragrant. Basic Recipe of Tsaitaogwey (daikon cake) 菜頭粿. Grind your peeled daikon very finely in a food processor with 300ml of water. Heat oil to saute spice paste till fragrant, add sugar and radish, stir to disolve sugar. Add sago, melon and batter mix. Cook over medium heat till thick and sticky. Add more water if batter is too thick, turn off heat. Steam a well greased tray over boiling water. Pour batter and steam 30mins. Garnish with peanuts, cool overnight before cutting.
